Crunchy meringue and chocolate mousse… Do you really need anything else to enjoy? Le Merveilleux is in my opinion a perfect dessert for the holidays.
If you weren’t lucky enough to have the shop Fred’s Marvels near you, all you have to do is prepare it yourself. And good news, it’s really that simple.
I redid the meringue for the pavlova. Here, it is only a little more cooked to be crunchy. And for the filling, I chose to prepare a whipped chocolate ganache. Meringues can be prepared ahead of time. The ganache is prepared the day before, and the assembly is done at the last moment. As it’s an express cake, I also chose a very simple decoration. I just grated chocolate.
150g egg whites (5)
270 g of sugar
1 tsp cornstarch
1 small tsp white vinegar
Preheat the oven to 120°C.
Beating egg whites.
When the whips start to leave traces, add the sugar spoon by spoon.
Add cornstarch and vinegar. To mix together.
Spread 3 circles of meringue 18 cm in diameter on a baking sheet. To make pretty identical circles, you can take a plate or cut an 18 cm circle in paper. Just lay it on the baking sheet and sprinkle some icing sugar all around. When removed, the mark remains.
Bake for 1 hour and let cool in the oven off.
100g dark chocolate (70%)
400 ml full cream
Melt the chocolate in pieces with 100 ml of cream, in the microwave in 30 second increments.
Mix, then add the rest of the cream. Film and keep cool all night.

Whip the ganache very cold like whipped cream.
Place the first circle of meringue. Cover with whipped ganache.
Do the same with the second circle then the third.
Spread the rest of the ganache all around.
Grate the chocolate with a micro-plane and put it everywhere.
Keep in cool until serving.
To finish: the ideal is to make the assembly 2 hours before tasting it.
This cake does not keep for the next day.
Often, I am asked if this type of cake is easy to serve, if you can cut nice slices.
As you can see, it’s done very well.
Rather than a round shape, you can make rectangles in the same way to have a log. On the other hand, it remains a rather small cake. If you make it bigger, remember to provide more ganache.
Thus, it is all the same for 6 to 8 people.
