The Cookéo has been in my kitchen for a few weeks. I told you about it in this previous article (here). I use it very often, because I finally find this device very playful and above all, it saves a lot of time. It is very easy to use, and I found myself using it more and more often. There are many recipes online, but I have also started to adapt my usual recipes. And also to test some new ones.
As Cookéo users are very numerous, I think to offer you some from time to time as well as some tips for a very simple use of this device.
The Cookéo therefore allows you to cook faster. And if there is one vegetable that takes a long time to cook, it’s the carrot. Preparing Vichy carrots requires at least 30 to 40 minutes of cooking over low heat. At Cookeo, we go to 4 minutes. And the carrots are perfectly tender and delicious.
Vichy carrots are traditionally cooked with Vichy water. This water is also a real plus in the kitchen. Rich in minerals and bicarbonate, it allows vegetables to cook faster. They are tasty, while reducing the amount of salt.
My daughter lives a few steps from the Célestins spring. So, when I visit him, I take the opportunity to bring back a few bottles of water that I will use for different recipes. It’s still the class to cook with Vichy water!
One can of course also make Vichy carrots with normal water and possibly 1 minute of additional cooking.
Vichy carrots with Cookeo:
1 kg of new carrots
1 tsp sugar
1/2 vegetable stock cube
10 cl of Vichy water
Peel and cut the carrots into slightly thick slices.
Put the Cookéo on the brown function and melt the butter.
Add carrots and sugar and sauté for a few minutes, stirring occasionally.
Add the stock and water and close the Cookéo. Cook for 4 minutes under pressure.
Open the device, and return to browning. Leave to cook until the water has evaporated. Preheating time is sufficient.
Season with pepper and add a little salt if needed.
Serve hot with chopped parsley.
To finish: it is not necessary to wait for the end of preheating to add the ingredients.
In this recipe, there is not a lot of liquid. The risk is sometimes to have an error code for lack of water. I had a lot of them at the very beginning, before realizing that the screw inside the lid of the Cookéo had to be tight, without being too tight. Since then, I have no more error codes.
The preparations must therefore have a minimum of water. This is why when opening, it is essential to prolong the cooking slightly in browning mode, until the water evaporates.
Allow perhaps 1 minute more cooking time with normal water.
New carrots are tender, so it may also take 1 minute longer with others.
This dish is for 4 people as a side dish. But, we enjoyed ourselves so much with my son, that we ate almost everything together.
And without Cookéo? The principle is the same, but in a sauté pan and over low heat. Cover the carrots with water, and add more as needed.
