Very chocolate cookies with candied Espelette pepper

Usually, Valentine’s Day doesn’t particularly appeal to me. However, when I received a nice package of candied fruits from Auvergne from cruzilles and in particular a magnificent Espelette pepper, I immediately thought of associating pepper, chocolate and Valentine’s Day.

This is how I prepared very chocolate cookies since they are both cocoa and richly garnished with large pieces of chocolate. A slight hint of subtle and very pleasant spiciness is provided by small pieces of candied Espelette pepper. Your Valentine should love this attention, especially since the cookies are in XXL version and in the shape of a heart.

Very chocolate cookies with candied Espelette pepper:

180g T55 flour
125g brown sugar
20g bitter cocoa
1/2 tsp baking powder
1 pinch of salt
120g soft butter
1 egg
200g dark chocolate
1/2 candied Espelette pepper (cruzilles)

Preheat the oven to 180°C.

Mix flour, sugar, cocoa, baking powder and salt. Give a blender to reduce the brown sugar, often a little coarse, to a fine powder.
Add the soft butter and the egg and mix everything with your fingertips or still in a food processor.

Coarsely cut the chocolate bar and incorporate the pieces into the dough.

Finely chop the candied Espelette pepper and add the pieces to the batter, taking care to separate them well.

Divide the dough in two and place it on a baking sheet.
To have a heart shape, use a frame that will be removed for cooking.
Bake two cookies.

Cook for 15/16 minutes.
Allow to cool before peeling off the sheet.

Make a nice package and give to her lover.

To finish: if you don’t have candied Espelette pepper, don’t panic! You can also use small cubes of candied ginger or even candied orange peel.
You can also replace part of the chocolate with roasted hazelnuts for 10 minutes at 180°C. It’s also delicious.
And if you don’t have a heart-shaped frame, you can make circles.

Allow 12 minutes to bake for normal sized cookies.
