Today, we forget the greyness for the time of a recipe and we escape to Spain. I am delighted to tell you about the essential tortilla de patatas. I love this dish! It’s a treat, which I enjoy both as a tapas and for dinner. This is a very simple and always delicious recipe.
It’s even better with Consorcio Serrano Ham, another of Spain’s must-have dishes.
Consorcio Serrano Ham is made in Spain from 100% Spanish meat. It is matured for an average of 12 months. This is what gives it its incomparable texture and its light nutty taste. This ham can be used as an aperitif, in a salad or as here, in a hot dish. It’s the perfect accompaniment to so many recipes.
Preparing a tortilla is very easy. Initially, it will be necessary fcook the potatoes in a little oil. They soften and take on the flavors of garlic. Then beat the eggs and add the Consorcio Serrano ham cut into pieces and a little cheese.
For cooking, I prefer the oven, because it’s much easier. But, if you know how to heat and turn the tortilla, do not hesitate to do it in a pan.
This tortilla will be ideal for dinner, served with a nice salad and of course a slice of Consorcio Serrano Ham.
Tortilla de patatas with Consorcio Serrano Ham :
2 cloves garlic
100 g of Consorcio Serrano ham
70 g of cheese (Manchego)
salt, niora pepper
4 slices of Consorcio Serrano Ham for serving
Peel and cut the potatoes into thin slices.
In the pan, heat a little oil and add the 2 cloves of garlic, peeled and crushed.
Add the potatoes, and cook covered for 10/15 minutes. Stir occasionally. The potatoes are ready when they are lightly browned and tender.
Remove the garlic cloves and let cool.
Preheat the oven to 200°C.
Scramble the eggs. Season.
Add the Consorcio Serrano ham in pieces and the grated cheese. Season.
Add warm potatoes. Mix gently so as not to break them.
Return the pan to the heat with a little oil.
Pour the preparation and cook over medium heat for a few minutes.
Place the tortilla in the oven and cook for about 15 minutes.
Serve warm, with salad and Consorcio Serrano Ham.
To finish: to go from the fire to the oven, I use a 20 cm cast iron skillet. You can also put everything in a baking dish.
