Sweet potato spaghetti, chicken and peanut sauce

My little favorite back-to-school dish… These sweet potato spaghetti, accompanied by chicken and a delicious peanut sauce are a delight. I made this dish during the week for a solo lunch and I really enjoyed it. This sweet potato spaghetti and peanut sauce is everything I love. I didn’t leave a crumb of the plate you see in the photo.

As a result, I had to make this dish over the weekend for my little family who absolutely wanted to taste it.
No problem, because it’s very easy to prepare. You still need a lot of ingredients to make the sauce. All of them can be found without any difficulty, and it is always good to have them in your cupboards, as soon as you want to cook Asian cuisine.
And I’m sure you too will make this sauce again and again once you’ve tasted it.

Sweet potato spaghetti, chicken and peanut sauce

2 tbsp peanut butter

1 tsp honey

1 tbsp fish sauce (or nuoc mam)

1 tbsp rice vinegar

2 tbsp soy sauce

1 tsp sesame oil

1/2 lime

4 to 5 tbsp of water

3 small sweet potatoes

2 chicken cutlets

1 spring onion

1 clove of garlic

1 piece of ginger

1 small chilli (optional)

roasted peanuts, fresh coriander

Prepare the sauce. Combine peanut butter, honey, fish sauce, rice vinegar, soy sauce and lime juice. You can use a small robot to mix easily.

Add water to make it more liquid.

Cut the sweet potatoes into spaghetti and the chicken into pieces.

Finely chop the spring onion.

Grate the garlic and ginger.

Finely chop the chilli.

Cook the sweet potatoes in a large skillet with a little oil. Add a little water as soon as you see that it attaches, and count 5 minutes of cooking. Personally, I like them crunchy, but you can bake them a bit more.

Fry the chicken over high heat, until golden brown.

Lower the heat and add the white part of the spring onion, the ginger, the garlic and the chilli.

Add sauce. Mix and it’s ready.

Serve the sweet potatoes and the chicken immediately and accompany the greens of the spring onion, roasted peanuts, fresh coriander…

To finish: this recipe is very easily adaptable. Vegetarians can enjoy replacing the chicken with tofu.
Instead of water, you can also use coconut milk.
You can also replace the sweet potato spaghetti with Chinese noodles.
