Swedish Pinocchio cake with meringue and strawberries

When I travel to a country, I also like to discover its gastronomy. And of course, I don’t fail to visit all the most popular food blogs. In the process, of course, I subscribe to their Instagram account to follow what they prepare on a daily basis.

In Sweden, I started following a lot of very, very greedy accounts. And that’s how I discovered the Pinocchio cake. I saw that one everywhere! From what I have been able to understand, this cake is a summer classic, the family cake. It is very simple to make and appeals to everyone. For us, it is more original. Indeed, it consists of a sponge cake and a meringue. And the great feature of this cake is that the 2 cook at the same time. Hazelnuts add crunch.

A little whipped cream, lots of strawberries, and here is the perfect summer cake.

Swedish Pinocchio cake with meringue and strawberries:

Cake:


100g butter

100g sugar
4 egg yolks
100g of flour
1 heaped tsp baking powder
45g milk
1 tsp vanilla extract

Whisk the soft butter and sugar until very creamy.
Add the yolks. Whisk.
Add flour and yeast. To mix together.
Add milk and vanilla extract. To mix together.

Spread the dough into a large pan (33×23 for me) or a rectangular plate covered with a baking sheet.
To book.

Meringue:


4 egg whites

140g sugar
Chopped hazelnuts (or slivered almonds)

Preheat the oven to 160°C.

Beating egg whites.
When the whisks start to streak, add the sugar, one tablespoon at a time.

Spread the meringue over the cake.
Sprinkle with hazelnuts.

Bake for approximately 40 minutes. Check for doneness by gently lifting the cake. It must be cooked in the center.
Let cool.

Assembly:

130 g full cream
60g mascarpone
20g vanilla sugar
300g strawberries
Mix the very cold cream, the mascarpone and the sugar.
Whip whipped cream.
Cut the cold cake in the middle.
Cover the first half with whipped cream then strawberries.
Cover with the other half.
Book cool.

To finish: it is possible to put another layer of whipped cream on top and decorate with strawberries. For that, do not hesitate to plan a little more. I didn’t because I thought my cake was already high enough.
