Strawberry tart, Breton shortbread and whipped vanilla ganache

It’s been a while since I posted anything here. I took advantage of the holidays to take a break. It feels crazy to go out in the sun.

I share with you today the recipe for a very simple pie to make. And, we can be simple while being pretty and delicious. It is a Breton shortbread, a whipped white chocolate and vanilla ganache, and strawberries. It’s the season, so let’s take advantage of it! The ganache is prepared the day before, so that it is well flavored and very cold. So she rides perfectly. I chose to do a nice poaching. It is still very easy to do. If you are not comfortable with the piping bag, you can also simply cover the shortbread with this ganache. The taste will be the same.

Vanilla whipped ganache:

70g white chocolate
150 g full cream
1/2 vanilla pod

Heat half the cream and vanilla. Let infuse.
Melt the chocolate and the cream infused in the microwave, in 20-second increments. Mix well.
Add the rest of the cold cream and mix well

Refrigerate overnight.

Breton shortbread:

3 egg yolks
110g caster sugar
110g soft butter
150g flour
1 tsp baking powder
1 pinch of fleur de sel

Preheat the oven to 170°C.

Beat the egg yolks and powdered sugar with a mixer. When the mixture is white and unctuous, incorporate the softened butter. Mix until you get a smooth mixture.
Add the flour, baking powder and fleur de sel. Blend until smooth.

Pour the preparation into a circle of 21/22 cm.
Bake for approximately 30 minutes.

Let cool.


200g strawberries
Whip the ganache like whipped cream then put it in a smooth piping bag.
Pipe the cream all around the pie. With a small spatula or the back of a spoon, crush the mousse towards the centre. To make it clearer, you can see the gesture on video by clicking here.
Garnish the center with mousse, then arrange the cut strawberries.
Keep cool and enjoy preferably during the day.

To finish: I chose to flavor my ganache with vanilla. You can choose other flavors, such as tonka bean. With a few drops of essential oil, it is also very nice. For example, I recommend rose geranium, which goes very well with strawberries.
