This year, my apple cake is deliciously flavored with cinnamon and cardamom. It is divine. It is also very soft, and nicely covered with slivered almonds. I love it !
However, it was far from over. Indeed, the first time I made this cake, I was not seduced by the dough. I found it too thick, there were too many apples, my mold was too big… So, I put it in the oven without conviction and without any particular attention. At one point, I really had to taste the result. And surprise, against all odds, it was really very good. Except it wasn’t baked in the center.
So I redid it with love and patience. And this time, he’s just too good.
I put it directly in my favorite cakes.
Spiced apple cake:
110 g butter at room temperature
110g blond sugar
5g lemon juice
1 tsp baking powder
1 pinch of salt
1 tsp cinnamon (from Ceylon)
1 tsp cardamom
apple jelly (recipe)
Preheat the oven to 180°C.
In the bowl of the stand mixer, mix the butter and sugar for a long time.
When it is homogeneous, add an egg and continue beating for 2 minutes.
Add the other egg and beat for another 2 minutes.
Meanwhile, mix the milk and lemon juice.
Mix the flour, baking powder, salt, cinnamon and ground cardamom.
Cut the peeled apples into cubes.
Add the milk to the dough. To mix together.
Add the flour mixture and mix lightly.
Add the apples. (The batter is thick, that’s normal. And there’s no shortage of it compared to the apples.)
Pour this mixture into an 18 cm circle or mold.
Cover with almonds and bake for about 40 minutes.
If the almonds brown too much, place aluminum foil on the mold at the end of cooking.
Remove from the oven and cover the cake with apple jelly, warmed for a few seconds in the microwave.
Leave to cool before enjoying.
Keep at room temperature.
To finish: the cardamom gives a lot of flavor to this cake. It is possible to put a little less if you are not too used to it.
On the other hand, do not use cardamom already powdered. She has no taste.
And to take good spices, I also advise you to choose real Ceylon cinnamon.
