Spaghetti with salmon and green asparagus

This season, my favorite way to cook pasta is with salmon and green asparagus. And I just realized that I still hadn’t put the recipe here.
And yes, these are the recipes that I make most often that are not here. I always have a good excuse to tell me the next time… Because, if for work I take the trouble to cook on purpose to take the picture, therefore taking all my time to choose my background, my accessories and everything and everything, it is quite different for the recipes that I publish here. These are really the recipes that I share with my family. We are in real life here. So when it comes to a cake, that’s pretty cool, because there’s normally time. But, when it comes to a dish that must be eaten hot, I might as well tell you that for the photo, it’s 3 minutes maximum. So sometimes, often, I get too lazy to take the picture. So, I tell myself the next time… Especially since it must be admitted, savory recipes are not those that trigger overflowing enthusiasm on your part. And it always saddens me and it’s not very motivating.

But now, I can finally share with you this delicious way to taste asparagus. I love this vegetable so much that I put it everywhere when it’s in season. This goes by so quickly.
It’s with Anna that I had discovered this way of cooking them. It is very easy to prepare and really delicious. There is a little trick to have a well flavored sauce. The base is actually a reduction of onion, white wine and broth. The aromas are concentrated and make it possible to obtain a delicious sauce. For asparagus, 3 minutes of cooking in boiling salted water is enough. I like that they stay a little firm.

Spaghetti with salmon and green asparagus:

400g spaghetti
1 onion
1 vegetable stock cube
250ml white wine
200 ml liquid cream
300g of salmon
500g green asparagus
salt pepper

Heat a pan of salted water.
Remove the small leaves from the stems of the asparagus, then cook them for 3 minutes.
Rinse with cold water.
Cut the stems into small sections and keep the heads whole.

Cook the pasta according to the instructions on the package.

Finely chop the onion and put it in a pan with the stock cube and white wine.
Cook over medium heat until almost no liquid remains.
Add the cream and bring to a boil.
Add the cubed salmon and cook for a minute.
Add asparagus and drained pasta.
Season and serve immediately.

To finish: if you like the asparagus more cooked, prolong their cooking for 2 minutes.


Instead of salmon, you can also use trout.
