Spaghetti and zucchini salad

I promised you other pasta salad recipes that change from those we usually eat. You loved the Israeli couscous one. I have no doubt that this one, with spaghetti and zucchini, will please you just as much.

The idea is to mix spaghetti with zucchini “spaghetti”. The latter are raw, which already makes the mixture irresistible. For even more flavors, I roasted cherry tomatoes in the oven, and I accompanied the whole thing with mozzarella di buffala, pine nuts and small black olives.
This salad is so good that it may well become your favorite summer salad. You won’t be able to do without it. Its only drawback is that it requires turning on the oven and heating a pan of water. Which is never ideal when you suffer from the heat.
But hey, the promise of a good meal makes us ignore these little inconveniences.

Spaghetti and zucchini salad:

250g spaghetti (wholemeal)
2 zucchini
250g cherry tomatoes
150 g buffalo mozzarella
2 tbsp pine nuts
1 clove of garlic
olive oil
2 tbsp vinegar (tomato)
salt pepper

Cook spaghetti according to package instructions.
Rinse them with cold water.

Prepare the zucchini spaghetti.
Mix them with the cooled and drained spaghetti.

Preheat the oven to 200°C.

Arrange the tomatoes in a dish and drizzle them with oil. season.
Let cook for about 15 minutes.
Remove them from the dish, keeping the cooking juices.
Add the grated garlic clove. To mix together.
Add the vinegar and a little more oil.

Pour this vinaigrette over the spaghetti. To mix together.

Spread the tomatoes, mozzarella, roasted pine nuts and olives on top.
Add a few basil leaves, a little more salt and pepper and a final drizzle of olive oil.
Serve immediately.

To finish: to make zucchini spaghetti, there are different devices, at different prices. I have a veggie bullet, which was offered to me. I find this device very useful. It allows you to cook vegetable dishes differently. Afterwards, I admit that I would not have put as much money on a product of this type.

I love tomato vinegar. If you have the joy of seeing some, do not hesitate to take some, because it is rather difficult to find.
You can use sherry vinegar instead.
