Skillet Express Flatbreads

The flatbread recipe I’m giving you today should do you a lot of good. This is the recipe that I often make on the fly, to accompany a curry. In India, they are chapatis. We use a flour that is not too fine, and, unlike naans, there is no yeast.

You can see in the photo that it is this version that I have chosen to illustrate.
But, to tell you the truth, I also use this recipe to make homemade wraps or as tortillas or with Lebanese mezes. This is my all-purpose recipe. It is perfect whatever the use. With a hummus, it’s to die for.

This recipe is also really very simple and very quick, since it is not necessary to let the dough rise. Cooking is done in a pan. On the other hand, these are breads that are used immediately, because they are then very soft.

Really, give this recipe a try! I’m sure you’ll adopt it. It’s child’s play. I also find their making very pleasant, almost playful. I like to spread the dough thinly, and above all, to see it cook and rise in the pan. It’s fascinating.
And, you get it, you can use these express flatbreads in so many ways. It’s always much better than the ones you buy. Because there are only 3 small ingredients that make them up. Only flour, water and salt.

Express Skillet Flatbreads:

250g flour (T55, T80)
160 g of water (to be slightly adapted to the flour used)
1/2 tsp salt

Put the ingredients in a robot, and knead for a few minutes, until you have a nice smooth ball. Kneading can also be done by hand.

Cover the dough and let it rest for 20 minutes.

Place the dough on a floured work surface and divide it into 8.
Heat a skillet (ideally cast iron).
Meanwhile, roll out the first loaf very thinly. Flour the work surface and the rolling pin if it sticks.
Place the dough on the hot pan and cook on the first side. Meanwhile, roll out another ball of dough. When the first side is cooked, turn the bread over and cook for a few more minutes. You should see the dough puff up.
Set aside and do this for the 8 loaves.

Use immediately, as these breads do not keep very well.
