Savory tart with nectarines and goat cheese

A very pleasant pie, to be made like me on the way back from the market. In my bag, pretty nectarines as well as fresh goat’s cheese, and the desire to combine the two for my lunch.
A dough with olive oil and fresh thyme complete this pie.

To be enjoyed with a small drizzle of honey, added just out of the oven.

As an accompaniment to a salad, this pie is both original and delicious.

Savory tart with nectarines and goat cheese:

Dough:

250g of flour
40g olive oil
1 egg
1 tsp salt

In the bowl of the robot, put the flour, olive oil, egg and salt.

Knead all in agradually adding 2 to 3 tablespoons of water.

Place the dough on a floured baking sheet and roll it out.


Book cool.


Trim:


6 nectarines
1/2 log of fresh goat cheese
olive oil
salt pepper
fresh thyme
Honey


Preheat the oven to 180°C.


Cut the nectarines into thin slices.


Spread the crumbled cheese over the dough. Season.
Spread the nectarine slices on top.
Sprinkle with thyme.
Season and cover with a drizzle of oil.


Bake for 30 to 35 minutes.


Add a pinch of honey before serving.

Finally: instead of nectarines, you can also use yellow peaches.


In goat cheese, a Sainte Maure de Touraine will be perfect.
