Salted yogurt cake with mixed vegetables

It is always very pleasant to put in the basket a savory cake that you decorate according to your tastes. The salty yogurt cake is in the same vein and just as pleasant. Here again, you can flavor it according to your desires or according to what you have in the fridge.

I chose to use a small jar of mixed vegetables which I prepared recently. The salted yogurt cake is really very simple to prepare, fresh, light and delicious.
My children chose to eat it with homemade mayonnaise. Me, I liked to accompany it with sheep’s cheese.
In any case, a small salad will be perfect with it.

Salted yogurt cake with mixed vegetables:

1 pot of plain yogurt
3 jars of flour
1 packet of dry yeast
2 large eggs
1/2 jar of olive oil
200 g drained vegetable salad (recipe here)
fresh basilic
salt pepper

Preheat the oven to 180°C.

Pour the yogurt into a bowl.

Rinse and dry the jar.
Add the flour, baking powder and oil to the bowl. To mix together.
Add the eggs. To mix together.
Add coarsely chopped basil, salt and pepper.
Add the salad and stir gently.

Pour the mixture into a cake tin.

Bake for about 40 minutes. Check for doneness with a wooden skewer that should come out dry.

Allow to cool before unmolding and cooling on a wire rack.

To finish: as I told you, I like to eat my cake with cheese. It is also possible to put the cheese grated or in pieces in the dough before baking.
