Rustic apple pies

Want a good comforting snack? These are the pies we all need. With apples, because it doesn’t get any easier or better. And with a very crunchy shortbread dough with almond, gourmet as you wish.

These little rustic pies are also very easy to make.
I love this method. You can imagine all sorts of savory or sweet toppings, but above all, there is no need for a mold or a particular helping hand. I had already proposed several ideas, rather summery, with zucchini, nectarines or the strawberries. I’m surprised not to see more, because I prepare it very often, especially with apples.

For the flavors, we chose cinnamon, because we love it and just for fun, we also added a nice drizzle of salted butter caramel after cooking. Delicious!


Rustic Apple Pies:

Shortbread:

100g butter

50g icing sugar

30g ground almonds

1 pinch of salt

1 egg

180g flour

I use my Thermomix, but you can do the same thing with your hands.

Mix butter, sugar, almonds and salt.

Add the egg, without stopping the device.

Add the flour and knead for about 30 seconds. Sometimes the addition of a trickle of water may be necessary.

Spread the dough on a baking sheet and set aside in the fridge.

Trim:

6 small apples

2 tbsp brown sugar

1 squeeze of lemon juice

1 tsp Ceylon cinnamon

25g butter

salted butter caramel.

Peel and cut the apples into cubes.

Mix with sugar, lemon juice and cinnamon.

Take the dough out of the fridge and cut it into 6 rounds of about 15 cm. It will be necessary to reroll the dough.

Fill the circles with apples and leave the circle free.

Fold the dough over the apples and place them on a baking sheet.

Brush the tops of the tarts with a little melted butter.

Refrigerate for 20 minutes.

Preheat the oven to 180°C.

Bake the pies for about 30 minutes.

Drizzle with salted butter caramel.

To finish: it’s the same day that these pies are the best, and even better, still lukewarm.


If you don’t like cinnamon, use vanilla sugar, for example.
You can also make just one large pie. You will then have to adjust the cooking times.
