If you’ve been following my recipes for a long time, you know how much I love yoghurt cake. This is a very simple recipe, but still excellent. It is a perfect base for many cakes. We are never disappointed with the result.
My yogurt cake is just improved with a bit of almond powder.

The rhubarb is simply cut into strips using a vegetable peeler. These strips then bend easily and make it possible to form this pretty spiral.
Did you know that there is absolutely no need to peel rhubarb? Frankly, unless you’re using a very stringy rhubarb, this step adds nothing to the preparations. The only effect is to lose the pretty red color. Which is a pity.

When I told you that the preparation of this cake was very simple!

Rhubarb cake:

1 pot of yogurt (125 g)
2 jars of flour
1 jar of ground almonds
1 jar of golden sugar
1 packet of baking powder
2 eggs
1/2 jar of sunflower oil
1 tsp vanilla extract
A few stalks of rubarb

Pour the yogurt into a bowl.

Clean the pot and dry it.

In a salad bowl, pour the jars of flour, that of almond powder, that of sugar and yeast. To mix together.

On the yogurt, add the eggs, oil and vanilla extract. Mix, then pour this mixture over the dry ingredients. Mix without insisting.

Pour the preparation into a greased 22 cm mold if necessary.

Preheat the oven to 180°C.

Remove the ends of the rhubarb stalks, then cut strips using a vegetable peeler.
Gather the strips in spirals.
Continue until you have the right size. You will need about 5 stems. Afterwards, it depends if you have a lot of losses. In any case, keep these to make another preparation, such as a compote.

Place the spiral on the cake and press it down slightly.

Cook pin about 40 minutes. Check for doneness heartand if necessary extend slightly. Let cool before unmolding.

To finish: instead of vanilla extract, you can use vanilla sugar or even syrup. It is also possible to use an alcohol, such as amaretto or rum.

I am told that it is not easy to cut this cake. As you can see in the photo above, I had no difficulty. Afterwards, I admit that over the years, I learned to cut slices of cakes, even the most delicate ones, properly in order to take the photos. For that, my tomato knife is my favorite. But a sharp knife will also do the trick. And above all, we slide the blade.
