Rabbit souvlaki and tzatziki

Enjoying the summer, the heat. We agree that it is the best time of the year. And even if we don’t have the chance to be on vacation yet, we love these lunches, these evenings spent around a good barbecue.

I love making homemade skewers. And the souvlaki, these little skewers discovered in Greece, are certainly my favorite. For a change, I prepared them with rabbit. We don’t always think about this meat, and that’s a shame. It is very easy to cook and low in calories. The taste is delicate and tasty. I chose to use rabbit legs. It’s very easy to cut them into pieces. All that remains is the marinade to prepare before making the skewers.

Of course, my little Greek skewers come with the essential tzatziki, which is also homemade. It’s so good. I also prepared a Greek salad. With pita bread, it’s a treat! Now sit back and enjoy this delicious moment.

Rabbit souvlaki and tzatziki:

4 rabbit legs
3 tbsp lemon juice
2 tbsp olive oil
2 cloves garlic
1 cucumber
250 g Greek yogurt
1 clove of garlic
1 tbsp lemon juice
1 tbsp olive oil
Salt pepper

Cut the rabbit legs into pieces.

Add lemon juice, olive oil, grated garlic and finely chopped mint.
Mix and marinate for at least 20 minutes.

Put the marinated pieces on small skewers.

For the tzatziki, grate the cucumber with a coarse grater.
Salt and let stand for 20 minutes.

At the end of this time, squeeze well between your fingers to remove all the liquid.
Put in a dish and add the yogurt, grated garlic, lemon juice and olive oil. Season and mix.

Cook the skewers on the plancha or on the barbecue.

Serve with pita breads and a salad made with tomatoes, cucumbers, Kalamata olives, red onions and good Greek olive oil.

To finish: count 3 skewers per person. You will do 12 with all four thighs. You can also choose other parts of the rabbit, such as fillets.
