Pumpkin Halloween Cookies

For me, Halloween is above all the good excuse to cook pumpkin and squash in all the sauces. I particularly like to cook them sweet. In brioche or tart, it’s delicious! This year, I had planned pumpkin cookies.

And then, my cookies welcomed cute spiders. Success guaranteed! The spider’s body is a praline chocolate candy. The eyes are made of sugar and the paws are simply made with melted chocolate that is put on with a cone. For this one, a simple sheet of parchment paper that you fold is enough. To keep it in place, I simply staple the top.

It’s really very easy to transform simple cookies for Halloween. Of course, the spider is completely optional. It’s the little extra for the occasion and I’m sure the kids will love it.
These cookies are also perfect on their own. With a pumpkin spice latte. I promise you an exquisite moment.

Pumpkin Halloween Cookies:

80g pumpkin purée
115g butter
90 g blond vergeoise
40g sugar
1 egg yolk
170g flour
1 tsp cinnamon
1/2 tsp baking soda
1 pinch of fleur de sel
100g milk chocolate

To have pumpkin puree, cook the pieces for about 5 minutes in the microwave in a closed container or covered with film.

Melt the butter in a small saucepan, until it takes on a light hazelnut color. Let cool.

Put the butter and the sugars in the bowl of the food processor and whisk for a few minutes.
Add the egg yolk and whisk until smooth.
Add the pumpkin puree and whisk to combine well.

Add flour, cinnamon, baking soda and salt. Mix without insisting.

Cut the chocolate into pieces and add them to the batter.

Prepare balls of cookie dough and place them on a baking sheet.
Refrigerate for at least 30 minutes.

Preheat the oven to 180°C.

Slightly flatten the balls of dough, then bake for about 12 minutes. Turn the plate halfway through cooking.

Let cool.

For the spiders:

chocolate candies
sugar eyes
50g milk chocolate

Melt the chocolate and put it in a paper cone.

Glue the candy and the eyes with a drop of chocolate.
Draw the 8 legs.

To finish: instead of pumpkin, you can also use butternut.

As for spices, you can also use a pumpkin pie mix, or add a little nutmeg.

My usual cookie recipe is with soft butter. Melted butter allows cookies to spread more during baking. The hazelnut butter is the little extra that I love.
