Pumpkin and chocolate muffins

It may come as a surprise, but pumpkin is really delicious for dessert. I tested more than once, especially with a layer cake, a creme caramel or with Brioches and I’ve always loved it.
This time, I wanted small chocolate muffins.
With spices, it’s really, really delicious.

The realization of these pretty cupcakes is very simple. You just have to start by preparing a mash. I chose the pumpkin, because I love its little taste.
With a hot chocolate, here is a delicacy that would almost make me appreciate the season and the cold.

Pumpkin and chocolate muffins:

2 eggs
100g brown sugar
80g soft butter
225 g pumpkin purée (recipe here)
80ml milk
220g flour
2 tsp baking powder
1 level tsp pumpkin spice (cinnamon, ginger, nutmeg, allspice and cloves)

1 pinch of salt
100g 70% dark chocolate

Preheat the oven to 180°C (static heat).

Whisk eggs and sugar.
Add the butter and continue to whisk.
Add the pumpkin purée and the milk. To mix together.
Mix the flour, yeast, salt and spices, then add them to the dough. Mix without insisting.

Cut the chocolate into pieces and add them. To mix together.

Pour batter into muffin tins. I made 30 small and 2 large.

Bake for about 15 minutes for small ones and 25 for large ones.

To finish: For baking muffins, I always switch to static heat. It’s not that I appreciate, because the cooking is not very homogeneous, but with the convection heat, my muffins always have strange shapes.

It’s muffins are just as good the next day.
