Puff pies, peppers and eggs

Today, I suggest you prepare very simple pies with peppers and egg. This is the kind of recipe that I love. It’s quick to make, and always delicious to eat. And then, the combination of peppers and egg is always perfect. Besides, at the same time as I write these lines, I note myself to prepare a chakchouka very quickly.

To easily prepare these pies, I recommend the pre-rolled puff pastry from the store. Yes, it’s the simplest. Choose it pure butter of course, and preferably spread out in a rectangle. It is obviously more convenient to obtain rectangular tartlets.

You will then need skyr, peppers quickly sautéed in the pan and eggs. For the service, you can add toasted pine nuts and fresh coriander.

Puff pies, peppers and eggs:

3 bell peppers (small)
olive oil
1 rectangular puff pastry
4 tbsp skyr
4 eggs
Pine nuts
salt pepper

Preheat the oven to 210°C.

Cut the peppers into pieces and fry them in a little oil over high heat for about 5 minutes.

Unroll the dough and cut it into 4.
Put a spoonful of skyr on each piece and top with peppers. You can leave a hollow in the center.
Add a little cilantro and season.

Bake for approximately 15 minutes. The dough should be golden.

Remove the baking sheet from the oven and crack an egg in the center of each pie.
Return to the oven for about 5 minutes. The white should be set and the yolk still runny.

Sprinkle with toasted pine nuts and cilantro.

Enjoy these hot pies with salad.

To finish: you can replace the skyr with Greek yogurt.

If you don’t have rectangular dough, that’s no big deal. Cut a round dough and you will have pies in triangles. The taste will be the same.

If you like it a little spicy, add a little chili powder.
