Potatoes with coconut milk and lime

The recipe of the day is a magnificent dish of potatoes with coconut milk and lime. The idea for these flavors comes to me from Y. Ottolenghi. My recipe doesn’t have much to do with his.

This dish is a real treat. It will bring sunshine and good humor to your return to school. It’s exactly what you want to eat when you get together with your family in the evening or on weekends. This is a recipe that can stand on its own. You can also accompany it with meat. A roast chicken, a cutlet or grilled chops. Leftovers are perfect for reheating the next day. Which is perfect for filling a lunch box. It can also be easily integrated into your weekly batch cooking.

The recipe is really very easy to make. You just need to allow some time for cooking. It takes a good hour for the potatoes to be tender. The advantage is that cooking does not require any special attention. A simple glance from time to time is enough.

Really, I recommend this dish. It will make a splash on the table.

Potatoes with coconut milk and lime:

1 kg of potatoes
1 onion
2 cloves garlic
2 unwaxed limes
250g coconut milk
250g vegetable stock
salt pepper

Preheat the oven to 180°C.

Cut the potatoes into thin slices.

Fry the finely chopped onion in a little oil.
When it is well cooked, add the grated garlic.
Add to potatoes.
Also add the zest of a lemon and 50 ml of juice, the coconut milk and the vegetable stock. Season and mix.

Pour into an ovenproof dish and cook for about 1 hour. Check that the potatoes are very tender, if not, add a little cooking time.

Serve with coriander or parsley for those who don’t like it, and possibly sweet pepper.
