Pizza with Camembert, figs and watercress

At home, we often prepare pizzas. For a long time, Friday was always “pizza night”. I very much regret that we can no longer do this. It was our routine at the beginning of the weekend, a friendly moment where everyone participated.
Since then, our pizza nights have been a little more irregular, and sometimes they even move to lunch, like last weekend. Which allows me to take pictures and put the recipe here.

More and more, I compose my pizzas right out of the oven. It’s find it so much better! A few watercress leaves, pieces of Camembert and figs… I really enjoyed myself.

Pizza with Camembert, figs and watercress

Dough:

300g T55 flour
165g water
1 tbsp olive oil
1 tsp baker’s yeast
1 tsp salt


For this, I use my Thermomix, but you can do the same with your favorite robot.
In the bowl, put the water, oil and yeast. Heat to 37°C.
Add flour and salt. Knead for 3 minutes.

Let rise in the closed bowl for about 45 minutes.



Trim:


For 2 pizzas:


4 tbsp heavy cream
10 very thin slices of smoked bacon
cress
2 figs
1/2 Camembert (Gillot)
Honey
salt pepper
chilli oil


Heat the pizza oven.


Turn the dough out onto a floured work surface and divide it in half.

Spread the first with the fingers.


Place on top, cream, slices of breasts.
Season.


Cook for about 5 minutes.


Remove from the oven, add a handful of watercress, a cut fig and pieces of Camembert.
Add a drizzle of honey and chilli oil.


Enjoy immediately.


Prepare the second pizza while the first is cooking.


To finish: I have a pizza oven since already several years and I adore it.


In the traditional oven, the temperature should be set to the highest level and if possible place the garnished pizza on a plate or even better, on a hot stone.
You may need to adjust the cooking times.
