As soon as the weather is nice, we all want ice cream. Ideally, one would want to prepare them at home, to be sure of their composition. But, we must admit that sometimes, even with an ice cream maker, the result is not up to our expectations. Personally, I don’t like my ice creams and sorbets to be too hard and not smooth enough.
For ice cream, I finally adopted the sweetened condensed milk method. I have also shared a number of recipes with you.
For sorbets, there is the strawberry cloud recipe. This ice cream is absolutely perfect. Why not just keep this method for other fruits. I had already tried with raspberries. This time I tested with apricots. It’s a delight. You can make balls right out of the freezer. And we have the good taste of fruit. Besides, there is nothing simpler to do.
I used my KitchenAid, but a simple electric mixer does just fine.
I am conquered!
Perfect apricot sorbet, express and without an ice cream maker:
2 egg whites
100g brown sugar
1 tbsp vanilla sugar
Coarsely chop the apricots.
Put them in the KitchenAid bowl with the egg whites and sugars.
Whisk for about 10 minutes. The mixture should be frothy.
Put in a container and leave in the freezer for at least 6 hours.
To finish: choose the best possible apricots. They must be very ripe and fragrant, otherwise your sorbet will lack flavor.
