Peanut Butter Cookies

The start of the school year is slowly looming. No, I don’t want to depress you! On the contrary…
Back to school is an opportunity to go back to the kitchen to prepare little sweets for afternoon tea. Whether it’s for our children or for ourselves, these little chocolate cookies filled with a heart of peanut butter will be the ideal and well-deserved break during a long day at work.

To make these cookies, I used the cookie recipe already presented here. I simply added a small ball of peanut butter in the center. It’s as delicious as can be.

After writing this article, I think I’ll go directly to prepare some… The temptation is really too great!

Peanut Butter Cookies:

150g dark chocolate (70%)
40g butter
1 egg
80g sugar
1 tsp vanilla extract
1/2 tsp baking powder
40g flour
butter peanut (Toonuts)

Melt the chocolate and butter in the microwave in 30 second increments.

Whisk egg and sugar.
Add the warm melted chocolate. To mix together.
Add the vanilla. To mix together.
Add flour and yeast. To mix together.

Place the dough for about 30 minutes in the fridge to firm up.

Prepare about ten balls of peanut butter the size of a small walnut.
Keep them cool too.

Preheat the oven to 180°C.

Prepare cookies. Divide the dough into about 10 pieces.
Spread 2/3 of a first piece in the palm of your hand and place a small ball of peanut butter on top. Cover with the rest of the dough, trying to hide the peanut butter. It’s not very serious if there are small cracks, there will be no leakage during cooking.

Do the same for all cookies

Arrange them on a baking sheet, spacing them apart.

Cook for about 10/12 minutes.
Leave to cool before taking them off.

To finish: the peanut butter I used is sweet and lightly flavored. It’s perfect for this kind of preparation.

And with a heart of spread… That should be delicious too, right?
