Peanut butter butternut soup

Winter is slowly setting in. The good excuse to start making good warming soups again. As you may know, soup isn’t really my favorite thing to eat. On the other hand, I love to prepare them. There are so many possible recipes! I find it an inexhaustible source of inspiration. So, even if I don’t eat a lot of it, I prepare it very regularly.
There are already a few soup recipes on the blog. Each time, I’m always surprised how little interest you show them. So I share very little. Anyway, I bought a copper saucepan on purpose to take pictures of soups. And, I have to make it a little profitable. So, maybe I will offer you more regularly in the months to come.

This time, I wanted to make a butternut squash soup. The opened jar of peanut butter seemed like a good idea to me… There you go! Peanut butter flavors in a subtle way and brings a lot of creaminess to this soup. I find it really very good.
Of course, I couldn’t resist adding a little spice. But that is not compulsory.

Peanut butter butternut soup:

1 butternut squash (medium size)
1 onion
1 clove of garlic
1/2 red pepper (according to your taste)
400ml vegetable stock
3 tbsp peanut butter
salt pepper
olive oil

Brown the chopped onion with a little oil in a large pan.
Add the garlic clove and the chilli.
Add the peeled and cut butternut squash.
Cover with broth and season.

Cover the pan 3/4 and cook over medium heat for about 15/17 minutes. The butternut should be tender.
Add the peanut butter and mix.
Check the seasoning.

Serve hot with possibly roasted peanuts and coriander.

Finally: it may sometimes be necessary to adjust the amount of broth. You can cover the vegetables with it, without weighing it down. In this case, do not mix with all the broth. It is easier to add than to remove.
