Our holiday favorite is, of course, the panettone. I haven’t prepared one yet this year for lack of time. You can find my basic recipe here. And other gourmet versions, here and there. If I didn’t make the brioche, I still made a panettone-flavored cake for a snack. It is a moist cake, flavored with citrus fruits and rum, and garnished with orange peel and raisins. It’s a simple cake, but terribly greedy. Coming back from a short walk, with a hot chocolate, it’s really very pleasant.

To make this cake, you just need to soak the raisins in water a little in advance. At the same time, I prepare the aromatic garnish, so that the flavors blend well. You can plan this operation the day before. It is even the ideal. If you don’t think about it, we can also do it 1 to 2 hours before. The rest is done very easily.

I somewhat regretted my choice of mould. Maybe a smaller, taller pan will be more reminiscent of panettone. However, the result really impressed me. Besides, right away I would take a little bit of it.

Panettone cake:

60g raisins
40 + 60ml orange juice
The zest of an orange
the zest of a lemon
20g honey
20 ml of amber rum
200g flour
1 heaped tsp baking powder
130g sugar
90g melted butter
4 eggs at room temperature
60g candied orange peel

At least an hour in advance, put the raisins in a bowl of water.

Prepare the aromatic garnish. Mix 40 ml of orange juice, finely grated zest, honey and rum. let stand at room temperature.

Preheat the oven to 160°C.

In a bowl, sift the flour and baking powder.
Add the sugar. Pour the lukewarm melted butter in the centre, the remaining lukewarm orange juice (so as not to set the butter), the egg yolks and the aromatic garnish. To mix together.

Beating egg whites.
Add them to the mixture using a spatula.

Pour some batter into an 18/20 cm mold. Spread over some drained and dried grapes and pieces of orange. Add dough, more fruit, until you have none left. Normally they should stay in the middle and not fall to the bottom.

Bake for about 40 minutes. Check with a wooden skewer if it is well cooked.
Sprinkle with icing sugar and serve cold.

To finish: you can replace the melted butter with oil.
