Olives stuffed with goat cheese

An aperitif without olives is like a summer without sunshine. Unthinkable!
I absolutely need my little bowl of olives for me to be really happy. Green or black, it doesn’t matter.

For a change, I suggest you garnish pretty green olives with a goat cheese stuffing and then bread them. It’s completely different. Olive lovers will be delighted and those who usually shun them will easily be tempted.

To accompany them, I prepared a slightly spicy homemade ketchup. A delight!

Olives stuffed with goat cheese:

150 large pitted green olives
40g goat cheese (fresh)
1 to 2 tbsp liquid cream (if needed)
2 tbsp flour
2 to 3 eggs
fine breadcrumbs
salt pepper

Mash the cheese with a fork.
Add a little cream so as to have a supple texture. It will be necessary to adapt the quantity according to whether the cheese is more or less fresh.
Season.

Pour the mixture into a piping bag fitted with a small smooth nozzle.

Top the olives with the garnish.

Pass them in the flour, then in the beaten and seasoned eggs, then in the breadcrumbs.
Pass again in the egg then in the breadcrumbs.

Heat a small oil bath.
Brown the olives.

To finish: I chose green olives this time, but black olives will also be perfect.
