Nectarine and watercress salad

Finally, summer is here! Do you dream of good salads?
I offer you one that has been very successful with me.

Watercress is my favorite salad right now. Delicately scented, these little leaves work wonders. I put it everywhere.
Watercress appreciates a little sweet touch. It is therefore quite naturally that I married it with grilled nectarines. A little goat cheese and speck and the whole thing is seasoned with a honey and Espelette pepper vinaigrette.

This is an original salad that will seduce everyone.

Nectarine and watercress salad:

6 nectarines (very ripe)
1 punnet of watercress
4 slices of speck
6 slices of goat cheese log
1 tbsp runny honey
1 tbsp lemon juice
2 tbsp olive oil
salt pepper

Cut the nectarines into 4 without peeling them.

Heat a grill pan or use the barbecue.
Color the nectarines, without cooking them completely. It goes very fast.
To book.

Mix honey and lemon juice.
Add olive oil and Espelette pepper.
Emulsify.

In a salad bowl, arrange the watercress leaves, the coarsely chopped speck, the pieces of goat cheese and the nectarines.
Drizzle with vinaigrette.

Taste.

To finish: I buy my goat cheese from a producer. I like it little done.
Choose the one you like the most.


Instead of nectarines, you can also use yellow peaches.
