Do you know this way of preparing pizzas, which consists of replacing the dough with a kind of cauliflower pancake? This is a recipe that has been around for a long time, but I must admit that I had never made it before. And there, I have just prepared 2 times in less than 15 days. It must be said that it is very, very good.
If I had never tried this way of making the base of the pizza, it’s certainly because I’m more used to socca, a chickpea flour preparation. I love it, and I do it very often. My recipe can be found here.
But in truth, I was conquered by the cauliflower. It’s easy to prepare and delicious.
For the filling, I made it simple, with tomato sauce and mozzarella. Then I served it with arugula and dry ham. You can imagine all the toppings you want, according to your desires or what’s in the fridge.
Mozzarella Cauliflower Pizza:
1 small cauliflower
40 g parmesan
100g tomato sauce
80 g grated mozzarella
Prepare the cauliflower and remove all the stems. There should be about 500 g left.
Mix to obtain a kind of semolina coarse.
Put in a salad bowl, film and make precook for about 2 minutes 30 in the microwave. Let cool.
Preheat the oven to 200°C
Bishake the cauliflower in your hands lukewarm to extract as much water as possible.
Add the egg and the grated parmesan. Season and mix.
Spread the preparation on a baking sheet, trying to have a circle of about 25 cm. You can use a pastry ring. Pack well.
Cook for about 15/20 minutes.
Remove the pizza from the oven and cover it with tomato sauce and mozzarella. Add the olives, a drizzle of olive oil and season.
Continue cooking for about 10 minutes.
Serve with arugula and ham. And of course, a drizzle of chilli oil.
To finish: do not hesitate to pre-cook the cauliflower in advance to give it time to cool and be easy to handle to remove the water. Otherwise, it burns. Rather than doing with your hands, you can also use a clean towel and tighten it well.
