Maybe you’re looking for an idea for meals this weekend? Who knows, between two storms, you might consider a picnic, or an aperitif on the terrace. Personally, I dare not believe it, but hey, you have to dream a little.
If not, it might be a TV night. It seems to me that tonight there is a football match…

No matter the program, I have the recipe for you! This milk bread recipe is perfect for any occasion. It is a friendly dish that is placed in the middle of the table and which is sure to delight everyone.

First, you will have to prepare the milk bread. We can do it a little in advance. At the last moment, we cut, and garnish with ham and cheddar. A little butter flavored with garlic and parsley, a short passage in the oven and voila, the trick is played.
Eat with your fingers!

Milk bread filled with ham and cheddar:

Milk bread:

120g water
1 tsp dehydrated baker’s yeast
15g of sugar
1 egg
250g of flour
1/2 tsp salt
60 g powdered milk (regilait)
40g butter

I use my Thermomix, but on your side, do the kneading according to your habits.
In the bowl, put the water, yeast, sugar and egg.
Heat to 37°C.
Add the powdered milk, then the flour and salt. Knead for 6 minutes.
After one minute, add the butter in pieces, without stopping the machine.

Leave to rise in the closed bowl for about 1 hour.

Place the dough on a lightly floured work surface, and cut it into 12.
Flatten a first piece with the flat of your hand, then bring the edges towards the center. Roll to have a nice ball and do the same with the other pieces.
Place the 12 balls in a frame or mould.

Leave to rise away from drafts for 1 hour to 1 hour 30 minutes.

Preheat the oven to 180°C.

Brush the milk bread with a little milk and bake for about 15 minutes.

Let cool or cool completely.


40g butter
1 good clove of garlic
200 g cheddar cheese (smoked Dorset Red for me)
250g ham (thinly sliced)
flower of salt

Chop the garlic and parsley and mix them with the soft butter.

Cut the bread and top it with slices of cheddar, slices of ham, then more slices of cheddar.
Close and spread the garlic butter over it.

Bake for 10/15 minutes, until the cheese melts.

Preferably serve hot.

To finish: I chose to garnish my milk bread with ham and cheddar. We can consider other fillings and especially other cheeses.
Milk bread can also be used with a cold filling, such as chicken and salad.
