In my opinion, Pavlova is just the most awesome dessert in the world. Already, it’s super good and then, it’s beautiful. And above all, it’s so easy to do!
So, if for Christmas the log does not tempt you more than that or if you do not want to take your head, the Pavlova is made for you! It’s also so pleasant to end a heavy meal with this kind of dessert, which remains fresh and light in the mouth.
As I said, the preparation is really simple. The first thing to do is to prepare the meringue. It is crispy on the outside and soft on the inside. We can absolutely
come forward and prepare it the day before. The same day, all that remains is to garnish it with mascarpone cream and fruit. Exotic fruits are always nice during the holidays. I chose mango and passion fruit because that’s my favorite. We could also choose a good pineapple.
Pavlova with mangoes and passion fruit:
90g egg whites (3)
1 tsp cornstarch
1 small tsp white vinegar
180 g full cream
1 tbsp icing sugar
1 small mango
1 passion fruit
Preheat the oven to 160°C.
Beating egg whites.
When the whips start to leave traces, add the sugar spoon by spoon.
Add cornstarch and vinegar. To mix together.
Place the meringue on a baking sheet, hollow out the center and roll up the edges.
Put in the oven and immediately lower the temperature to 120°C.
Let cook for 1 hour.
Let cool completely.
Whisk the cream, mascarpone and icing sugar into whipped cream.
Spread it over the pavlova.
Arrange the mango and passion fruit on top.
To finish: choose fruits of very good quality. It is essential, even if they are a little more expensive.
You can add the seeds of a vanilla pod to the whipped cream.
This pavlova is not very big. It will be fine for 6 large slices.
