How about tasting with me a delicious sorbet with exotic flavors? And this one, I promise you, it’s really delicious, perfectly creamy and fragrant. I relished every bite. Hmmm!
To prepare it, I told myself that I was going to do it a little differently than usual. It must be said that I am always looking for the ideal method to have a sorbet that remains creamy. Of course, I want to keep the flavor of the fruit, and not add more sugar than necessary, nor stabilizers that are difficult to find.
So far jam sugar, which contains pectin, has given me great results, especially in this strawberry sorbet. So I prepared the syrup with this jam sugar. Well, the result was beyond my expectations. I’m going to decline it with other perfumes during the summer…
Mango and lime sorbet:
400g mango puree
100 g of jam sugar
Put the water, sugar, zest and lemon juice in a saucepan.
Bring to a boil and simmer for 1-2 minutes.
Leave to cool, then pour this syrup over the mango purée. To mix together.
Refrigerate for a few hours.
Put the preparation in the ice machine.
To finish: I regularly buy fruit puree, because it is very practical. You can also mix in fresh mango.
