“You can make this recipe with frozen Alaskan king crab, or in season, with snow crab legs. Ask your fishmonger to cut the legs in half to make it easier for you. It is very easy to find king crab legs already pre-cooked in fishmongers. Serve with my green apple and celery risotto.»

Ingredients :
1 kg king crab or snow crab legs, pre-cooked and halved
50 ml vermouth (e.g. Cinzano)
50ml white wine
50ml lemon juice
1 French shallot
2 sprigs of fresh thyme
75g butter

Preparation :
– Shell the precooked crab meat and set aside in the cold.

– Fry the chopped shallot in a little butter, add the wine, vermouth and lemon juice and let reduce until almost dry.


– Add the rest of the butter and the thyme while mixing.


– Place the crab meat in the butter and warm it over low heat.

Service :
– Serve the crab drizzled with lemon butter with my green apple and celery risotto or a green salad.
