When it’s cold, nothing better than a good soup to warm up. I love soups that have chunks, which are a real rich, comforting meal.
The jota is not well known here. I discovered it last summer in Slovenia, after hike. The climb had been tough for me, and it was very hot that day. The magnificent view and the refuge from which I had spotted some very traditional dishes, motivated me. I almost never come back down, it was so good.
So we tasted the jota, a soup made with sauerkraut, beans, potatoes and sausages which we loved. At that time, I promised myself to redo one during the winter. The strukli covered with a whole bar of Milka is to be discovered, but we were much less impressed by it.

This soup is really easy to make and delicious. It is therefore composed of sauerkraut, which as everyone knows, is fermented cabbage. Unfortunately, here, we tend to only eat it in one form. However, it can be used for many dishes. And like all fermented foods, it’s great for our health.
We find sauerkraut already cooked or raw. This is the one I chose. I cooked it in water with the smoked sausages. On the other hand, I bought a jar of red beans. It’s obviously better to cook them yourself.

This soup is really delicious. I hope to inspire you to discover it. And maybe also to visit Slovenia. This small country is still too little known.

Jota – Slovenian meal soup with sauerkraut and smoked sausage:

700g raw sauerkraut
2 bay leaves
3 smoked sausages
3 potatoes
1 onion
100 g of bacon
2 cloves garlic
1 tsp paprika
1 heaped tbsp of flour
350g cooked red beans
oil
salt pepper
chicken broth

Cover the sauerkraut, bay leaves and sausages with water and cook for about 20 minutes at a low boil.

Peel and cut the potatoes into large cubes and cook for 10 minutes. They must remain firm.

Fry the chopped onion in a little oil.
Add the bacon bits and brown.
Add grated garlic and paprika. Mix well.
Add the flour and mix. Dilute with a little broth.

Then add the cooked and drained sauerkraut, the sliced ​​sausage, the cooked red beans and the pre-cooked potatoes.

Cover with broth. It takes about 1.5 to 2l. Season and bring to a boil.
Let simmer for 10/15 minutes.
Serve hot. This soup reheats perfectly. She’s even better the next day

To finish: to cook the beans yourself, do not forget to soak them in cold water overnight.
You can add a little tomato paste, for a redder color.

For a vegetarian version, remove the sausage and use vegetable broth.
