I like to prepare good jams. My pleasure begins as soon as I think about the flavors I could combine. And there, I perfectly imagined the sweetness of white peach and the sweet scent of old roses.
This jam is very delicate. It is perfect on toast, a pancake or a brioche. I also like it on my yogurts. It’s a jam that I want to offer.

Making jams is not very complicated. Above all, don’t worry about it. I always prepare my fruits, and here the flowers, the day before. Once mixed with the sugar, everything marinates slowly. The fruits will release their juice. The roses will develop their fragrance. And the next day, all that remains is to cook everything. By doing so, the jams are much easier.
For conservation, you can use glass jars recovered from previous uses. You will need to clean them well by putting them in the dishwasher or in a pan of boiling water.
A jam is sweet. Do not try to reduce the quantities of sugar any further, because it is what makes a jam have a good consistency and will keep over time.
Finally, the most difficult part of making this jam is perhaps finding very fragrant roses. Of course, they must come from the garden and above all not be treated. If your roses are not very fragrant, you can add a few drops of natural rose flavoring or rose water.
Jam of white and pink peaches:
1.5 kg of white peaches
6 or 7 fragrant roses
1 tbsp lemon juice
a few drops of rose flavoring (optional)
Heat a pot of water.
Incise the skin of the peaches, then immerse them for about 1 minute in boiling water.
Leave to cool, then peel and cut into small pieces.
Place the peaches in a large saucepan with the rose petals and sugar.
Cover and let stand for about 12 hours.
Bring the mixture to a boil.
Skim off the scum that forms.
Add lemon juice and cook for 10/15 minutes. I don’t like my jams to be too firm. You can check by pouring a little jam on a cold plate. The longer you leave, the more it will be taken.
If desired, add rose flavoring.
Pour immediately into jars and close them.
Finally: you can find natural flavors in the kitchen department of specialty stores. It is also possible to take essential oil. Dose sparingly. It’s about 3 to 4 drops.
Rose water can be used a little more liberally. But, it is not easy to find a good one.
But if your roses are very fragrant, there’s no need to add more.
