Have you ever tried making homemade butter? It’s really very easy and very pleasant to do. And the operation is very interesting when you want to have fun making flavored butters. These butters are very pleasant on a table to accompany a dish, or even used to sublimate a recipe or a product.

I needed seaweed butter for a holiday scallop recipe. Preparing this homemade butter is really the little extra. To make this recipe a success, all you have to do is put some cream in the mixer and let it run until the fat separates from the whey. Afterwards, all you have to do is drain it well and flavor it according to your tastes or your desires. Here, I added fleur de sel and seaweed. And that’s all!

You could make the same way a butter with Espelette pepper, truffle, pepper, vanilla, citrus fruits, spices, fried onions, coffee… Depending on the flavours, your flavored butter will find its place as an accompaniment to various savory or sweet recipes. Be inventive!

Homemade flavored butter:

400g of cream whole liquid
1 tsp fleur de sel
1 tbsp sea parsley (or another flavor)

Pour the cream cold in the mixer and run on high speed for 5 to 10 minutes, until get a yellow butter and the whey well separated from each other.

Pour into a colander and well drain pressing with a spoon to remove as much liquid as possible. You can also use a little muslin.

Add salt and seaweed (or another flavor) and mix with a wooden spoon.
Shape into a small tablet, always using spoons or put in small containers. Film.

Refrigerate and consume within days.

Homemade seaweed butter

To finish: with the whey, you can make pancakes, waffles, brioches…

Feel free to make a larger amount of butter and then prepare multiple flavors. You will seduce your guests with these.
