ginger syrup

When it’s hot, I love making thirst-quenching drinks that are rich in flavor and low in sugar. This time, I had the idea of ​​finding ginger ale, the ginger ale that I really like, but starting from my syrup to which I add sparkling water.
So I concocted a syrup very rich in taste. In a few days, my bottle was almost empty. Diluted with plain or sparkling unsalted water, in my cocktails, in my iced tea, in my strawberries… I couldn’t help but put it everywhere. We love!

Faced with such success, I just have to do it again.

ginger syrup:

150g fresh ginger
700ml water
350g sugar
1 lemon juice

Peel the ginger and put it in a saucepan with the water.
Bring to the boil and simmer for about 30 minutes at a low boil.

At the end of this time, add the sugar and continue cooking for about 10/15 minutes.

Off the heat, add the lemon juice.
Filter and bottle. Keep refridgerated.

Finally: the amount of sugar depends on the amount of liquid after cooking for 30 minutes. They should be roughly the same.


Leftover ginger is rich in flavor and can be reused in different preparations. You must not waste. I made with a delicious strawberry ginger jam.
