Frozen nougat with caramelized almonds and candied fruit

To celebrate the arrival of June, I wanted to offer you an ice cream. What better?
I’ve had an ice cream maker for years, the one whose tub you keep in the freezer, and I wouldn’t do without it for anything in the world. But, besides that, I also like to make ice cream without a device. They are always very creamy and pleasant to taste right out of the freezer, which is unfortunately not always the case with ice creams and sorbets made with a machine.

If there is one ice cream that I particularly like, it is iced nougat. There is nothing simpler to do and the result is always perfect. I love the crispness of caramelized almonds, the softness of candied fruit and of course the good taste of honey.

This frozen nougat has an incomparable smoothness and lightness. I was also able to verify it when taking the photos. I had planned a nice staging, but I had to do it as quickly as possible or I would only have a melted nougat left to photograph.

You have understood it, it is to be enjoyed as soon as it comes out of the freezer. A delight!

Iced nougat with caramelized almonds and candied fruit:

65 g of honey (all flowers)
2 eggs
60g of sugar
250g full cream
125 g almond kernels
1 heaped tbsp icing sugar
75 g candied fruit (figs)

Pour the almonds into a large skillet and let them brown slightly. Do not take your eyes off them and stir regularly.
Add the icing sugar and allow to caramelize slightly.
Pour onto a baking sheet.

Finely chop 50 g of candied fruit. The rest will be used for decoration.

Heat the honey in a saucepan.

At the same time, start whipping the egg whites. When the honey is boiling, drizzle it over the whipped egg whites while continuing to whisk.
Whisk for a while longer, to cool.

Whisk egg yolks and sugar until frothy.
Add the egg whites to this mixture, gently with a spatula.

Whip the cold cream into whipped cream.
Add it to the previous mixture, always gently.

Add 100 g of caramelized almonds and finely chopped candied fruit.
Mix gently.

Pour into a silicone cake mold and reserve in the freezer for at least 12 hours.

Unmold the frozen nougat, and decorate it with the remaining caramelized almonds and candied fruit.
Enjoy immediately.

To finish: I used candied figs, but you can choose the fruit you like, like orange, citron…

In the same way, almonds can be replaced by pistachios, pine nuts, hazelnuts. My kids suggested I use chocolate chips. Why not!
Either way, it’s delicious!

The frozen nougat can be served with a raspberry coulis.
