Fish cakes

It’s been a long time since I bought breaded fish or other preparations of this type in the store. There is actually nothing simpler than making your own breadcrumbs and it tastes so much better. In addition, it is really economical.

On the other hand, I have long tried to prepare donuts that are to my liking, very crispy and nicely puffed up. I tried a number of pastas, which did not convince me.
This one is perfect! Cold beer is really the secret to a crispy batter.
I promise you, young and old alike will love these donuts.

Fish cakes:

600g cod fillet (or other fish)
100 + 25g flour
50g cornstarch
1 tsp baking powder
190 g of cold blond beer
salt pepper

Heat a frying pan.

Cut the cod into pieces.
Roll them in 25 g of flour.

Combine flour, cornstarch, baking powder, salt and pepper.
Add the beer. To mix together.

Pass the pieces of cod one by one in the batter then put them in the oil.
Leave to brown then set aside on absorbent paper.
Do the same for all the pieces of fish.

Eat hot with lemon and a hot sauce.
Serve with a salad.

To finish: I really like making these fritters with cod, but it’s also very good with whiting, pollock…

I am sometimes asked the question of the equipment I use for frying. I don’t have a fryer. I have to say, I don’t miss it that much. I use a large wok because the size makes me feel secure and the shape is convenient for my donuts to be comfortable.
Do not hesitate to use a large quantity of oil. It is kept for another time, after filtering.
