Sunday morning… The day when you can take the time to have breakfast quietly with your family. You may have prepared a brioche, or waffles? Others returned from the bakery with fresh bread. Still others feast on porridge.
In any case, a delicious homemade jam, with seasonal fruits will be the ideal accompaniment.
As I explained to you lately, I stopped stocking jars of jam. But I haven’t stopped doing it! Today I prefer to prepare small quantities and consume them quickly. An advantage of this way of doing it is that I can reduce the amounts of sugar to leave more room for fruit.
The fig jam is already delicious. With Port and pine nuts, it becomes the jam to put on the table. We loved her.
500g black figs
220g brown sugar
1 tbsp pine nuts
1 tsp Vitpris
Cut the figs into 6 or 8 pieces.
Cover with 200 g of sugar and leave to stand for about 2 hours.
Add the port and simmer over medium heat for 10/15 minutes.
Meanwhile, pass the pine nuts in a pan to brown them slightly.
Mix the remaining sugar and Vitpris.
Sprinkle this mixture over the figs and mix.
Add the roasted pine nuts.
Let simmer for a few minutes. The jam will thicken very slightly.
Pour into a tall glass and keep cool.
To finish: For a longer conservation, it will be necessary to adapt the quantities of sugar, because it is this one which allows a good conservation.
You will also need to use sterilized jars.
Pine nuts are very expensive, but their taste is inimitable. It only takes a spoonful.
You could also use walnuts.
