I really like figs. Right now, I can’t stop eating it. Simply roasted in the oven with a little honey. I like! I serve them with yoghurt, almonds, honey… It’s delicious. This pretty fruit is really very pleasant to cook.
Figs also lend themselves very well to savoury. So, I wanted to make roasted figs, but this time to be served on toast.
For the figs, I cooked them very simply. I simply put them in the oven with olive oil, balsamic vinegar and a little honey. I chose a good country bread that I toasted and lightly rubbed with a clove of garlic. For the cheese, I wanted to change it up a bit. So I chose cottage cheese. I find that this cheese is not used very often. Yet it really very interesting. I really like its rustic and grainy side.
Of course, we could choose another cheese, like ricotta to stay on an Italian side.
I accompanied these bruschettas with speck. This Italian ham is very nice with its smoky taste. With a salad, this is a great meal.
You can also offer these bruschettas as an aperitif.
Fig and cottage cheese bruschetta:
4 nice slices of country bread
1 clove of garlic
1 tbsp balsamic vinegar
1 tsp honey
200g cottage cheese
4 slices of speck
Preheat the oven to 200°.
Drizzle the slices of bread with oil. Season.
Cut the figs in 4, and put them in a dish. Mix the balsamic vinegar, 2 tablespoons of olive oil and honey.
Pour this mixture over the figs. Season.
Brown the slices of bread and roast the figs for about 15 minutes. Stir halfway through cooking.
Season the cottage cheese.
Remove from the oven, rub the slices of bread with the garlic clove.
Prepare the bruschettas with the cottage cheese and roasted figs.
Serve with speck and pine nuts. Optionally add basil.
