We can never sell enough the pleasure of homemade. This is even more true when it comes to products such as ketchup, often associated with fat food, and too industrial. However, to look at it closely, a ketchup is only good: tomato puree, sugar and vinegar for the sweet and sour side, a little cornstarch for the texture and herbs. It is thanks to these that you will personalize your ketchup. I use hot paprika, because I like my ketchup to be a little spicy. You can use sweet or smoky. Moreover, as I like to rediscover this smoky taste, I also add a little smoky aroma. Afterwards, you can choose the herbs and spices you prefer. In any case, it’s guaranteed fun!
Express homemade ketchup:
150 g of tomato coulis
20 g brown vergeoise
30ml sherry vinegar
1 tsp cornflour
1 tsp spicy pimenton (or mild, or smoked)
1 crushed garlic clove, a sprig of oregano
a few drops of smoked flavoring (optional)
In a small saucepan, combine all the ingredients and mix well.
Place the saucepan over medium heat and bring to a simmer. Let simmer for a few minutes while stirring.
It’s ready !
Leave to cool, then remove the clove of garlic and the sprig of oregano.
Put in a jar and keep cool.
Use within days.
To finish: my fries are made with the Air Fryer. I simply add a little oil and a mixture of spices.
