Tasting a curry is always very pleasant. It is a dish that I prepare very regularly. Often, it’s on the spur of the moment, with whatever vegetables I have on hand. And, I very often have coral lentils in my cupboards. As a result, it is a dahl who very frequently invites himself to my table. It’s simple and quick to do. It’s tasty and comforting. This is the perfect meal to prepare during the week. It also heats up very well.

To prepare a good dahl, you will need coral lentils. I love these lenses. On the one hand, they cook very quickly, but their texture becomes melting. What I particularly appreciate. You will also need coconut milk and spices. I like to serve it with basmati rice, cashews and cilantro. And, if I don’t feel like rice, I make flatbreads. Dahl of coral lentils:

250 g coral lentils
1 onion
2 cloves garlic
1 piece of ginger
2 tsp korma curry spice mix
3 tomatoes
250g coconut milk
350g vegetable stock
100 g baby spinach
salt pepper
cashew nuts, coriander, lime

Fry the finely chopped onion in a little oil.
Add spices, garlic and grated ginger. Leave to come back for a few minutes while mixing.

Add diced tomatoes and lentils.
Cover with coconut milk and broth.
Cover and simmer for about 20/25 minutes.

Halfway through cooking, add the spinach and mix. Continue cooking, still covered, over medium low heat. Normally, it is not necessary to add liquid. However, if you find it lacking, add a little broth.
The dahl is ready when the lentils are tender.

Serve with lightly pan-roasted cashews, fresh cilantro and lime.

Serve with basmati rice, flat breads.

To finish: I sometimes use other spices. For example, a mixture of garam masala, turmeric and chilli. I sometimes add mustard seeds. Sometimes I use curry paste. Do with what you love.

When I don’t have fresh spinach, I use frozen. It’s very useful. And when I want to change flavors, I use sweet potato cut into small cubes.
