Coconut and lime flan

A beautiful sunny day… My god it seems far away!
The sun has become so rare this winter.
Finally, that day, he was there, and he had inspired me with a delicious coconut and lime flan. This flan is very classic, but we never get tired of it. We love its extra creamy texture, its good taste of coconut delicately enhanced by lime. We also like it for its ease of realization.

If you do not yet know this delicious flan, I invite you to prepare it very quickly. You will not regret it!

Coconut and lime flan:

70 g of sugar
1 tbsp of water
3 eggs
300g sweetened condensed milk
300g coconut milk
1 lime
100 g grated coconut

Prepare the caramel. To do this, put the sugar and water in a small saucepan.
When it is golden, immediately pour it into a cake tin.
Place the cake tin in a large dish.

Preheat the oven to 160°C.
Heat a pot of water.

Mix egg yolks with condensed milk and coconut milk.
Add the finely grated lemon zest and juice.
Add coconut. To mix together.

Whisk the egg whites, then fold them into the mixture, gently using a spatula.

Pour over the caramel.

Pour the hot water into the large dish to have a bain-marie.
Cook for about 50 minutes.
Allow to cool before unmolding.

Keep refridgerated.

Coconut and lime flan

To finish: I use a small silicone cake mold, because I like to ensure the release. Even with a silicone mold, I cook in a bain-marie to get the perfect texture.

It is possible to make small individual blanks. I even think that I prefer.
They should then be cooked for about 30 minutes.

You can replace the lime with vanilla and rum.
