Ciabatta rolls for appetizer

I’m always looking for good ideas for the aperitif. I like that it is original, simple to prepare and of course delicious. These stuffed ciabatta rolls are absolutely perfect.
It’s an idea I stole from my blogger friend For the love of good things. She had prepared them for our last meeting.
For the recipe I chose to follow that of Frederic Lalos, Meilleur Ouvrier de France. She is perfect!

Ciabatta bread is an Italian bread made very soft by the olive oil contained in the dough. It is mainly used to make sandwiches. Large ciabatta rolls will give you great sandwiches. Here I simply cut buns of about 4 cm.

For the filling, you can imagine a multitude of combinations according to your desires.


Ciabatta rolls:

500g flour (T55)
270 to 300 g of water
2 level tsp dehydrated baker’s yeast
1 tsp salt
35g olive oil

As always, I use the Thermomix to knead my dough, but you can adapt to your usual way of doing it.

In the bowl, put the water and the yeast. Heat to 37°C.
Add olive oil, flour and salt.
Knead for 5 minutes.

Let the dough rise in the closed bowl for about 1 hour.

Place the dough on a floured silpat and make 4 flaps which will give it more strength.
To do this, first bring the top of the dough towards the center, then the bottom towards the center. Do the same from the left to the center, then from the right to the center. You get a “ball”.

Film and leave to rest for another hour at room temperature.

At the end of this time, generously flour the silpat and spread the dough with your fingertips until you have a large rectangle. Above all, do not use the roller!

Preheat the oven to 210°C.

Remove the film and lightly flour the dough to have a rustic side.
Cut with a horn small squares of about 4 cm. You will do about 40.
Place them very gently on two baking sheets and bake them for 12 to 15 minutes. They must remain blond and fluffy.

Let cool completely before cutting and filling.

It is quite possible to prepare the ciabatta breads in advance and keep them in the freezer. Simply put them in the oven for 1 to 2 minutes at 180°C to restore their freshness.

Toppings:

goat cheese slices (heal)
speck
tomato confit

And also:
rocket
grilled pepper
fresh figs
Parmesan pieces
pesto
olives
basil
flavored olive oils…

Compose according to your desires!

To finish: if you have a large number of guests, these ciabattas will be perfect. It will of course be essential to prepare the breads in advance. You can even make multiple batches.


The filling will be done at the last moment.


You will be able to compose large buffets that are really very nice.
The cost price of these delicious bites will be incomparable and your guests will certainly be amazed.
