Chocolate cake;  Only 2 ingredients!

It’s been a long time since I posted a chocolate cake recipe here. I was starting to miss it. The cake that I propose to you today is really for chocolate lovers. Indeed, it consists of dark chocolate and eggs. Nothing more ! It really is the easiest recipe in the world. You melt chocolate, you add the yolks, then the whipped whites, and you cook.

Chocolate and eggs… Suddenly, no flour so no gluten. No sugar other than that contained in chocolate, and no butter. All that, it’s not bad for our butts.
You are certainly wondering if with only chocolate and eggs, we will still enjoy ourselves. Well, yeah ! This cake is delicious, chocolatey.

I advise you not to cook it too long, so that it stays tender. At 15 minutes, I hesitated to take it out. At 18 minutes, I regretted not having released it sooner. Indeed, it was already beginning to crack on top.
I also recommend that you choose the chocolate wisely. You need a good chocolate, rich in cocoa, but still not too bitter either. The best chocolate is the one you enjoy. Personally, I wanted to use the remains of my Easter chocolates to empty my cupboards. It was pretty strong chocolate eggs and frying. I added some 50% chocolate squares to complete.

Chocolate cake 2 ingredients:

375g dark chocolate
6 eggs

Preheat the oven to 170°C.

Melt the chocolate in the microwave in 30-second increments or in a bain-marie.

Whisk the egg whites until stiff.
Add the egg yolks to the warm melted chocolate one at a time while whisking. The mixture will thicken.
Add 1/3 of the whipped egg whites and mix.
Gently add the rest of the egg whites with a spatula.

Pour the batter into a circle or mold of about 19 cm.

Cook for about 15 minutes. The cake should still be a little tender.

Let cool before unmolding and enjoying.
Best eaten the same day. Otherwise, you can pass it very lightly in the microwave to find it more melting.

To finish: to serve it, you can accompany it either like me with whipped cream and raspberries, or with custard or even a scoop of vanilla ice cream… There are only 2 ingredients in the cake, then, might as well have fun on the side.
And eat it right away, that’s where it’s best.
