Chocolate and caramel muffins
It seems that this day is the most depressing of the year. I do not know if that’s true. In any case, given the weather of the day, the icy fog atmosphere and the not necessarily very cheerful news, I think we all need a good pick-me-up. So I suggest you prepare really very tasty muffins. Imagine very chocolatey muffins topped with runny caramel. Already, I’m melting. But why stop there, when you can still add a good whipped cream and a pretty decoration?
Making these muffins is really not complicated. I used my favorite cake recipe. It is very soft and unmistakable. Once the muffins are cooked, I dig a hole using an apple corer, which then just needs to be filled with caramel. You have to be generous. All that’s missing is the mascarpone whipped cream, an extra dash of caramel and a few pieces of Daims.
So. It’s too good !

Chocolate Toffee Muffins:

120g flour
30g bitter cocoa
1 level tsp baking powder
1 pinch of salt
100g sugar
3 eggs
65g sunflower oil
90 g lukewarm milk
Salted butter caramel
100 g full cream
50g mascarpone
1 tbsp icing sugar
fallow deer

Preheat the oven to 160°C, static heat.

Combine flour, cocoa, baking powder and salt.
Add sugar and mix.
Make a well and add the egg yolks, oil and milk. To mix together.
Whip the egg whites until stiff and gently fold them into the batter.

Divide the mixture into 8 muffin cups lined with cases.
Cook for about 25/30 minutes.

Leave to cool completely then dig a hole in the center and fill it with caramel. The bigger the hole, the more generous the caramel.

Hand over a small cake topper.

Whisk the cream, mascarpone and icing sugar into whipped cream. Pipe over the muffins.

Decorate with pieces of Daims and a dash of salted butter caramel.
Keep refridgerated.

To finish: For the caramel, I know that many are not comfortable with its preparation. You can choose it already ready. I often use the one from Régilait.
