Chicken and Cheddar Quesadillas

Quesadillas are a small wonder of Mexican cuisine, which is sure to please everyone. This is a recipe that saves me very often when I’m out of inspiration. I always have a package of corn tortillas in my cupboard.

The realization of quesadillas is really very simple since it is a question of taking a corn tortilla and garnishing it with cheese, which will melt during cooking, and various small ingredients. Leftover chicken is perfect. I also like to add chilli and fresh onion.
For cooking, it is not even necessary to turn on the oven, since a hot pan is enough. It only takes 2 minutes to get hot, melt-in-the-mouth quesadillas. A delight!

To serve, the ideal is to accompany them with a salsa sauce.

Quesadillas are perfect for a dinner party or for a TV dinner. As an aperitif, it is a guaranteed success.

Chicken and Cheddar Quesadillas:

4 corn tortillas
150g grated cheddar cheese
1 nice cooked chicken fillet
1 green chilli
1 fresh onion

Take a tortilla.
Put a little sauce on one side then cover with cheddar.
Arrange the chicken pieces, pepper rings and chopped onion on top.
Close the tortilla.

Prepare the others in the same way.

Heat a frying pan. I use a grill pan to get nice stripes.
Place 2 tortillas in the pan and brown them on both sides.
Cook the other 2 in the same way.

Cut and serve hot.

To finish: it is essential to take real cheddar, not the one found sliced ​​under vacuum. Afterwards, you can also use another cheese.

For the chilli, it’s not easy to find your way around. I purchased green chiles with no indication of name or potency from my fresh store. Finally, they have a spiciness that I find very moderate and can easily be put in quesadillas.
It is also good to use a hot sauce.

You can also add fresh cilantro.
