Chia pudding with coconut milk

Chia seeds… I bought a bunch of them a few years ago. At the time, few people were still talking about it. So few moreover, that after a single and unique use, I completely forgot them at the bottom of my closet. However, we liked…
I had to taste the small dessert of carolina, during our last meeting of Auvergne bloggers to want to bring them out. Fortunately, the seeds do not expire!

But by the way, what are chia seeds?
These are very small seeds, rich in fiber, fatty acids like Omega-3 and vitamins like B9. For vegetarians, they are also a good source of complete protein. To eat them, just sprinkle them on salads.
These small seeds also have the particularity of forming a mucilage when they are put in a liquid. It is thanks to this that we can make good little desserts, without any effort.

With my daughter, we ate it almost every day this week. Believe me, it’s perfect with this heat, and when you have a ferry to pass.
Simpler as a recipe, it is impossible, because it is enough to mix the seeds and coconut milk and let stand. Afterwards, we accompany this pudding with what we like. I particularly like raspberries and caramelized almonds.

Chia pudding with coconut milk:

200ml coconut milk (Organic garden)
30g chia seeds
1 tbsp maple syrup

Mix all ingredients.
Stir after 5 minutes to evenly distribute all the seeds.

Leave to rest for about 1 hour in the fridge.

Caramelized almonds and pine nuts:

30g slivered almonds
30g pine nuts
1 tbsp icing sugar

Brown the almonds and pine nuts in a small pan for 2 minutes.
Sprinkle with icing sugar and let caramelize. Do not take your eyes off, because it goes very quickly!

Leave to cool on a baking sheet.

Serve the chia pudding with raspberries and caramelized almonds and pine nuts.

To finish: coconut milk can be replaced by other milks. Coconut milk is the one that, in my opinion, brings the most taste and creaminess.

You can flavor the liquid with matcha, fruit, cocoa…
You can sweeten with agave syrup, honey…

Depending on the quantity of seeds, the texture will be more or less firm. I like when it stays quite liquid.

For accompaniments, all fruits and coulis are good.
You can also use granola.
