Cauliflower korma, cauliflower cashew curry

Korma Cauliflower

I really enjoy preparing and eating curries. By the way, you will find several recipes on this blog. There are meat curries, like this one with chicken and mango, or this one with beef. And then there are vegetarian curries, whether sweet potato or lentil.

Cauliflower is one of those vegetables that are perfect cooked in curry. I make it regularly. On the other hand, I had never tried roasting the cauliflower in the oven, before putting it in the sauce. Well, I don’t regret having tried it. I love this recipe. In fact, I have already prepared it several times in recent weeks.

While the cauliflower cooks and browns in the oven, I prepare the sauce. I chose a korma sauce, made with cashew nuts. This sauce is delicious. It prepares very quickly, and thanks to the cashew nuts, it has a wonderful smoothness.
You could use raw cashews. In this case, they should be soaked for a while in hot water, before mashing them. I prefer to use mashed cashews. It’s faster and more convenient.

Korma cauliflower:

1 cauliflower
1 onion
3 cloves of garlic
1 piece of ginger
1 tbsp korma spice (or garam masala)
2 tbsp cashew nut puree
2 tbsp heavy cream
1 tsp tomato puree (optional)
400ml vegetable stock
100g spinach
salt pepper
olive oil

Preheat the oven to 210°C.

Cut the cauliflower into florets and arrange them on a plate.
Drizzle with a little oil and season.
Cook for 20/25 minutes, stirring during cooking.

Meanwhile, chop the onion and sauté it in a little oil.
Add garlic, grated ginger and spices. Let cook for 1 minute.
Put in a blender.
Add the cashew purée, the cream, the tomato puree, and a little broth. Mixer.

Pour this mixture into the pan, along with the remaining broth.
Let simmer for a few minutes.
Add the spinach, then the roasted cauliflower. To mix together.

Serve hot, with basmati rice, roasted cashews, and a little lime.

The great thing about this korma sauce is that it can be used in so many ways. You can of course use it for a chicken korma.
Rather than the creamone can use cream coconut or even yogurt.
I put a little tomato concentrate for the color it brings. It is not mandatory.

Feel free to add a little chilli for a more spicy curry.
