Carrot, date and cumin salad

For this beginning of autumn, I offer you a colorful recipe that highlights carrots. I could have talked about a Moroccan carrot salad. I think that we could quite taste carrots like this in Morocco.

There’s everything I love about this salad. Carrots are flavored with orange and cumin. They are so delicious. And then, in my salad I add dates and lots of coriander of course. I love that !
But I understand that not everyone likes it. Then use parsley.

This salad is really easy to make, especially if like me you have a Cookéo type pressure cooker. Cooking carrots will only take you 5 minutes. It will rather be necessary to count on 20/30 minutes in classic cooking.
This salad is the perfect accompaniment to grilled meats. I often prepare it as an accompaniment to merguez sausages.

Carrot salad with dates:

1 kg of carrots
1 clove of garlic
1/2 tsp ground cumin
1 tsp honey
100ml orange juice
8 dates
fresh coriander
olive oil
salt pepper

Peel and cut the carrots into equal sized pieces.

Cookeo:
Put 2 tablespoons of oil in golden mode.
Add the carrots and sauté for a few minutes.
Add grated garlic, cumin, honey and orange juice. Season.
Cook for 5 minutes under pressure.
Continue cooking for a few minutes in golden mode to evaporate the liquid.

Pan:
Add 2 tablespoons of oil.
Add the carrots and sauté for a few minutes.
Add grated garlic, cumin, honey and orange juice. Season.
Add a little vegetable broth so that the carrots are covered.
Cover and simmer until the carrots are soft but still a little firm.
Drain the carrots.

Put the carrots in a salad bowl.
Add the dates cut into pieces, the coriander and a drizzle of olive oil.
Check the seasoning.

Serve warm or at room temperature.
